It's Easy Being Green!
The week of September 21, 2009 Chartwells featured a "Eat Local" campaign designed to offer not only locally grown produce to Dominican's students but also introduce them to the farmers we work with every day to supply seasonal, fresh, local produce.
In October we partnered with the University to educate Dominican students about what we do every day to support sustainability at the University. All of the elements below have been incorporated into the dining program:
- Cage Free Shell Eggs
- Antibiotic Free Poultry
- Sustainable Seafood purchasing in partnership with the Monterey Bay Aquarium's "Seafood Watch" program
- Waste Reduction by going trayless and offering our "Project Clean Plate" program in Mazzuchelli Hall
- Ecologically Friendly Coffee
- Zero Trans Fats Cooking Oils
- Locally Grown Produce when in season
In Week 1 of Project Clean Plate this semester we measured 712 pounds of wasted food. In Week 2, we reduced that by 200 pounds are continuing to reduce every day. Chartwells, along with Campus Catholic Ministries, will donate 200 pounds of food to a local food bank at the end of the semester on behalf of our students and their efforts to reduce food waste.
